Meet/meat our fennel salami. Known as Finocchiona on the continent and a classic British Fennel Salami at home, this traditional flavor is crafted from the finest British Middle White pork.

 

The Makers' Inspiration

Fennel salami is a staple in charcuterie, and we knew we had to create our own. After a year of development, our version has become a cherished addition to our offerings.

 

How We Make It

Our traditional salami starts with heritage breed pork and local wine, combined with a hint of fennel. This small touch enhances the natural sweetness of the pork, which intensifies as the salami ferments and dries over several months.

 

Tasting Notes

This salami is light, fresh, and creamy, with subtle herbal and spicy notes. It’s versatile and pairs wonderfully with dishes ranging from eggs benedict to wrapped asparagus.

 

Beer match

The sweetness of the pork and fennel pairs well with a smooth, flavorful ale. We particularly enjoyed it with Rebellion’s Smuggler and IPA.
