Flower Meadow Merguez Salami

Meet/meat our salami version of the renowned merguez. Using hogget (more mature than lamb, younger than mutton) as the base for this wonderfully spiced creation, we've affectionately dubbed it "The Posh Kebab."

 

The Makers' Inspiration

We were thrilled to discover a local source of hogget. With its richer flavor, larger size, and sustainable nature, it perfectly suits our nose-to-tail philosophy. This exceptional meat is the foundation of our sheep-based charcuterie range.

 

How We Make It

After making our bresaolas and pancetta, the remaining cuts go into our hogget salami. We add pork fat at a low meat-to-fat ratio for the perfect texture. The spices are toasted and mixed in, along with local wine, before being fermented and air-dried to achieve the perfect result.

 

Tasting Notes

Sustainably grazed on flower meadows near Marlow, our hogget is as local as it gets. The sheep’s diet of wild herbs subtly influences the meat, which we enhance with a blend of herbs in our flower meadow cure. Combined with the traditional warm, spicy flavors of Middle Eastern Merguez sausage, it pairs beautifully with rich red wines, sheep’s cheese, hummus, and more.
