The Makers' Inspiration

Fennel salami is a staple for any charcuterie enthusiast. We were determined to include it in our range, taking a year to perfect our version, which has been a favorite ever since.

 

How We Make It

Our classic salami features heritage breed pork combined with local wine and a touch of fennel. This delicate addition brings out the natural sweetness of the pork, which deepens as the salami cures and dries over several months.

 

Tasting Notes

With a light, fresh, and creamy profile, accented by a hint of herb and spice, this salami enhances a variety of dishes, from eggs benedict to asparagus wrapped in salami.
